There are companies that can do it for you for a fee. Once you have the text file, log in to YouTube, go to Video Manager, click Edit on the video you wish to add your text file to, then Select Captions, on the following page click Add New Captions or Transcript, click Choose file, and select Transcript or Caption, and finally click Upload File. There is an option to add YouTube captions to your video when you first load your video. So YouTube will scrub your video and capture what it thinks are the words said on the video.
